Ruby K’s Bagel Cafe Now Offers Specialty Coffee Drinks With New Espresso Machine!

Ruby K’s Bagel Cafe now offers customers a new array of drinks from their new expresso machine. Owner Ruby Alexander explained that the espresso machine was purchased years ago but due to an exclusivity clause, Ruby K’s was prohibited from selling specialty drinks while Starbucks was open for business in the space next door.

With the recent move by the coffee behemoth to a new location on Trinity Drive, Ruby said it was decided to pull the espresso machine out. She said they work closely with their coffee roaster, Silver Canyon Coffee in Boulder, Colo.

“They’re amazing,” Ruby said.

With the espresso machine, Ruby said they are now offering lattes, cappuccinos, breves, americanos, mochas, chi lattes and of course espressos. A variety of syrups are available, too, as well as substitutions such as oak and almond milk.

Ruby K’s started serving up specialty coffees Dec. 1 but baristas are continually being trained. Ruby said she welcomes the community’s input in order to improve. She added that it is nice to have this new addition to the menu since Ruby K’s is located in the hub of downtown.

With more people working in the downtown area, Ruby K’s offers “a nice place to go to get away and meet a friend and have a coffee and a bagel,” she said.

Ruby K’s at 1789 Central Ave., Suite 2, is open 7 a.m. to 2 p.m. Monday through Friday and 8 a.m. to 2 p.m. Saturday and Sunday. To learn more, click here
