Encanto Bistro Opens Today In Central Park Square!

Los Alamos residents have a new option for dining – Encanto Bistro at 149 Central Park Square, which is holding a soft opening today. The bistro, open 7 a.m. to 7 p.m. Monday through Friday and 8 a.m. to 7 p.m. Saturday and Sunday, features Mexican and Italian food.

Founded in 2023 by Mayra Suarez and Ufemia Bernal, Encanto Bistro “embodies a celebration of culinary creativity and innovation,” according to a press release.

Suarez, formerly of Ruby K’s, brings her culinary knowledge to the kitchen, while Ufemia Bernal brings her expertise from serving as the Los Alamos Chamber of Commerce Membership Coordinator.

In addition to dining options, Encanto Bistro offers a small food market. It is partnering with Sassella Restaurant and Chocolate Maven to provide a diverse selection of high-quality products and baked goods.

Bernal explained that the restaurant has two phases. The first phase will focus on Mexican cuisine before expanding to Italian food in the second phase.

Bernal said she is excited to be able to offer more dining options to the local community.

“I think it is so important to have options,” she said.
