Community Invited to ‘The Spanish Table: Tapas y Vino’

ROTARY News:

The Rotary Club of Los Alamos cordially invites the community to its new fall fundraiser: The Spanish Table: Tapas y Vino. 

The event, which promises to be lively, informative and fun – is set for 5:30-9 p.m. Saturday, Nov. 2 at the Dixie Girl Restaurant and will feature five courses with five wine pairings, including dessert.

Included in the fun-filled event is a wine-tasting with professional sommelier Mark Johnson and live and silent wine auctions with Johnson engaging diners with his vast knowledge of wine and food pairings.

Chuck’s Wagon, a new food truck with a gourmet twist, opened for business Oct. 1 on Trinity Drive, across from Ashley Pond.

Chuck’s Wagon operates 7 a.m. to 2 p.m., Monday through Friday.

“We’re giving Los Alamos exposure to the food truck revolution that has swept both coasts,” owner Chuck Miller said. “We’re keeping the menu small, so we can focus on quality.”

Ingredients:
 
9 slices of good white bread with the crusts taken off and torn in to about ½ – ¾ inch pieces
1- 20 oz. can of crushed pineapple, drained very well
4 large eggs
¼ cup of melted butter
1 cup sugar
 
Directions:
 
Put the bread pieces in a medium bowl and set aside. Mix together pineapple, sugar, butter, and eggs. Mix this very well. Pour over the top of the bread pieces and GENTLY mix together for just a few turns.

‘Dinner Over Diamond’ Rescheduled For Sunday

Due to the copious amount of rain on Sunday, The United Way Youth Team rescheduled its “Dinner Over Diamond” fundraiser for 4-7 p.m. Sunday, Sept. 29 … rain or shine.

The overpass over Diamond Drive at Sullivan Field is a great vantage point to look over the town and take in the view while enjoying dinner and dessert. This unique dining experience will feature specialty pizzas and salad from Home Run Pizza and scrumptious dessert from the Los Alamos Co+op Market.

Ingredients:

1 box of puff pastry, thawed and both sheets sliced into quarters
4 oz. of pumpkin pie filling
¼ teaspoon cinnamon
¼ teaspoon nutmeg
2 tablespoons cream
¼ cup honey
1 egg
4-5 tablespoons of sugar-in-the-raw

Directions:

Pre-heat oven to 400 degrees. Unfold each sheet of puff pastry and pinch together any tears. Cut each sheet into 4 pieces. In a small bowl, mix egg well and “paint” it on edge of the pieces. In another small bowl mix together pie filling, spices, cream and honey.

1 pound chicken
3 cloves of garlic, pressed
Olive oil
12 lasagna noodles, cooked and drained
12 oz. ruff chopped roasted green chile
10 oz. Manchego Cheese, grated
16 oz. fresh mushrooms, sliced
8 oz. Kraft Grated 4 cheese Mexican blend
3 tablespoons of flour
3 tablespoons of butter
½ cup cream
½ cup milk
Vegetable non-stick spray
